A Taste of Saskatchewan

Homemade Granola: 

Ingredients: 
1 cup rolled oats (I prefer Only-Oats Gluten Free Oats) 
1/2 cup unsweetened flaked coconut
1 tbsp chia seeds
1 tbsp coconut oil
1 tbsp agave
0.5 tbsp honey (I prefer local from the Farmer's Market - great for allergies!) 

Instruction:  
Roast 1 cup of oats on a lined cookie sheet for 2-3 minutes at 300 degrees, or until just before they are golden brown. Add flaked coconut and chia seeds and roast another 60-90 seconds (I recommend keeping your eye on your oven - remove the pan before the coconut roasts brown). Then remove the pan from the oven. Melt coconut oil and agave in the microwave, and pour over the oat mixture, mixing well. Using a spatula, flatten the oats into a layer on the sheet. Drizzle with the honey, and place back in the oven with the heat off for 3-4 minutes. Once you remove the pan, let it cool before breaking the granola into pieces. For a more "chunky" granola, use more honey. Store in a glass jar or airtight container for best taste. 

For the Saskatoon Berry Parfait: 
3/4 cup plain fat free greek yogurt (My favourite is the Liberte Lactose Free) 
1/2 cup Saskatoon Berries (from Prairie Toons Orchard) 
2-3 tbsp of Granola
