Fall French Toast & Pumpkin Loaf
Tis’ the season for fall… which means pumpkin!
This pumpkin loaf is healthy, simple, delicious, and makes a flavourful french toast.
🍂Fall Pumpkin Loaf 🍂
Ingredients:
1 egg
1/4 cup coconut oil (melted)
2/3 cup pumpkin puree (not pumpkin pie)
2 tbsp honey
1.5 cups oat flour
1 packet stevia
1 tsp baking powder
1 tsp pumpkin pie spice
1/4 tsp cinnamon
Directions:
- Turn oven to 350 degrees.
- Beat together egg, melted coconut oil, pumpkin, and honey.
- Mix dry ingredients together.
- Mix dry ingredients into wet ingredients.
- Grease either mini loaf pans (will make 3) or a large loaf pan
*If you are not making french toast, you could mix in a few chocolate chips (1/4 cup) to the batter.
Cook for approx. 20 minutes or until toothpick comes out dry.
🍂Fall French Toast 🍂
This french toast recipe takes french toast to a new level of fall and flavour. With your cooled, fall pumpkin loaf
Ingredients:
- Fall Pumpkin loaf (cooled)
- 1 egg
- 2 egg whites
- 1/3 cup milk or milk substitute
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 1/4 tsp Pumpkin pie spice
- optional: 1 packet of stevia or a pinch of sugar
Directions:
- preheat large pan over medium heat
- Slice loaf either lengthwise for long french toast “sticks”, or cross-length for french toast “bites”
- Beat together all ingredients
- Dip the loaf into the dip for 10—20 seconds a piece
- Spray the pan
- Place the dipped loaf on the pan
- Flip in 1-2 minutes, once the pan-facing side is golden brown.
- Repeat on the other side, until both sides are golden brown.
- Serve and enjoy!
Optional: dust cinnamon and stevia over the finished french toast sticks. To make them even more “fun” - try pouring different syrups into small bowls for dipping.
These french toast sticks are great for a morning at home, or perfect “bite sizes snacks” for breakfast or snacks on the run!
