12 Days of Fitmas - Day 11: Eggnog Pancakes

Nothing tastes like Christmas quite like the sweet cinnamon flavour found in eggnog, and gingerbread. These pancakes combine the best of both worlds. 

EggNog Pancakes: 

  • 1/3 cup oats 
  • 1/3 cup cottage cheese 
  • 1/3 cup egg whites 
  • 2 tbsp eggnog (better yet, coconut nog, or almond nog) 
  • 1 tbsp vanilla protein powder 
  • 1/2 tsp vanilla extract 
  • 1/2 tsp cinnamon 
  • 1/2 tsp baking powder 

Gingerbread "Syrup": 

  • 1/4 tsp cinnamon 
  • 1/4 tsp ginger 
  • 1/4 tsp nutmeg 
  • 1/2 tsp molasses 
  • 2 TBSP Sugar free syrup 

Grind oats in a food processor. Add remaining ingredients and blend again. Allow the mixture to sit for 1-2 minutes. While waiting, mix the syrup ingredients together using a small bowl and a fork.

Heat a griddle. Pour desired sized pancakes. Flip when golden brown. 

Once pancakes are finished, drizzle with gingerbread syrup and enjoy! 

*Note: This makes a single pancake serving. This recipe can easily be doubled, or tripled.
