Breakfast just got a whole lot tastier!! Take your breakfast game to another level with these Vanilla Berry ProCakes!

Pancake Ingredients:

  • 1 cup LF Cottage Cheese

  • 3/4 cup White Whole Wheat Flour

  • About 46 grams Vanilla Protein Powder *not weight

  • 1/2 tsp. Ground Cinnamon

  • 1/2 tsp. Salt

  • 1 1/2 cup Egg Beaters

  • 1/4 cup LF Milk

  • 1/4 cup Canola Oil

  • 1 tsp. Vanilla Extract

  • Canola Oil Cooking Spray

Topping Ingredients:

  • Fresh or Frozen Berries of choice

  • Non-fat Plain Greek Yogurt

  • Toasted Pecan Pieces

ProCake Directions:

  1. Place ingredients in a blender; blend until smooth

  2. Heat large skillet or griddle sprayed with canola oil

  3. Make sure that the skillet is good -n- hot

  4. Flip cakes occasionally to cook both sides

  5. After you make all the cakes, cool completely.

**Serve fresh or freeze up to 2 weeks.

  • One 1/3 cup procake

  • 1 cup berries

  • 2 oz. yogurt

  • 1 Tbsp. pecans

3 unit portion:

  • Two 1/4 cup procake

  • 1 cup berries

  • 2 z. yogurt

  • 1 1/2 Tbsp pecans

4 unit portion:

  • Two 1/3 cup procake

  • 1.5 cup berries

  • 3 oz. yogurt

  • 2 Tbsp. pecans

5 unit portion:

  • Three 1/4 cup procake

  • 2 cup berries

  • 3 oz. yogurt

  • 2 1/2 Tbsp pecans
