BBQ season is upon us so we wanted to share a healthy spin on a fan favourite kebab!
Ingredients:
1.5 lb. Boneless Top Sirloin Steak, trimmed of any fat, cut into 2β chunks
2 Large Cloves Garlic, chopped
2 Tbsp. Fresh Rosemary, chopped
1 Tbsp. Balsamic Vinegar
1 Tbsp. Low Sodium Soy Sauce
1/2 Tbsp. EVOO
3/4 tsp. Cracked/Coarse Black Pepper, divided
1 Purple Onion, quartered
1 EACH Red, Orange, Yellow Bell Pepper, seeded, cut into 1 1/2β pieces
Grape or Cherry Tomatoes
1/2 tsp. Kosher Salt
Metal or Wooden Skewers (if wooden, soak for 30 min.)
Directions:
Step 1: At least 6 hours before; combine sirloin, garlic, rosemary, vinegar, soy sauce, EVOO and 1/2 tsp. pepper in a square baking dish. Cover and refrigerate for at least 6 hours, stirring about three times.
When ready, thread skewers, alternating individual skewers with portioned sirloin chunks and vegetables. Sprinkle threaded skewers with remaining 1/4 tsp. pepper.
Heat grill on medium-high heat. When hot, transfer skewers to grill. Cook, turning occasionally until sirloin reaches your desired degree of doneness.
